"What makes our coffee different?"
Three words, Intent, Love, and Chaos.
Intent -
there is a belief in some quarters that foods know the emotions and intent of the person preparing it. If you truly pay attention to your product on a personal level, be there, the resulting product will taste better i.e. grandmas apple pie (it also doesn't hurt when you have done it a thousand times). Call it strange but the roasters and I as trained chefs believe this to be true. Hand made products will always taste better than mass manufactured products.
Love -
We love what we do, period. The bean is such an amazing thing to work with. The palette variations we see in coffees from around the world is amazing. It is an incredible thing to meet people and introduce them to coffees perfectly suited for them, they go crazy. Well that was us four years ago. Since then we have roasted the bean in and on ovens, frying pans, bbqs, popcorn poppers, electric roasters, small roasters, and now our standard traditional gas fired drum roasters. We have definitely developed a very individual style and taste.
Chaos -
Remember that people go crazy thing? It has been pure and utter chaos since we started. People have loved it. We now supply several of the most prominent retailers and restaurants in the area with fresh roasted beans, as well as our markets, the internet, and a burgeoning festival scene. It is chaos keeping up with the roasting. Our beans are so fresh because we have so much going on they never even get to leave dust prints on the shelf! Coffee is like a loaf of bread, sooner from the oven the better so I geuss this works out well for all parties involved.
