London entrepreneurs will link with coffee, cashew growers in El Salvador

Luis Rivas, Jeff Pastorius, and Dave Cook, are travelling next month to El Salvador and Guatemala to forge partnerships with coffee and cashew producers from local Fair Trade co-operatives. Dave Cook of the Fire Roasted Coffee Co. and Jeff Pastorius of On the Move Organics will be headed to the backroads of El Salvador and Guatemala next month to forge partnerships with producers from local Fair Trade co-operatives.
Cook, who deals in premium international coffees, said it is another way to give consumers a more direct link to their food.
"This will allow us to focus on a single plantation and to create change . . . It's pretty special when I can show a picture or a video of the person who grew our coffee," he said.
Luis Rivas, a native of El Salvador who recently opened True Taco, a restaurant in the Old East Village, will help out on the trip as a guide and interpreter.
Pastorious said he "can't wait" to get to a small farming co-operative near the Lempa river in El Salvador where 60 families produce and harvest cashew nuts.
He said his customers will get high quality fresh cashews direct from the source and the producers will get a better price since dealers, known as "coyotes," will be bypassed.
Cashews are difficult to harvest and process.
Each nut grows at the end of a swollen, pear-shaped stem and must be separated from its stem and then shelled.
The kidney-shaped shell that surrounds the nut also contains a caustic oil that can burn skin. The nut has to be separated from the caustic oil by freezing or roasting. Even breathing the vapour during roasting can cause injury.
"It's very labour intensive. I respect the cashew a lot more now," said Pastorius.
Cook and Pastorius say shipping products directly from Central America will be a challenge, but with the help of Rivas they hope to work out a deal with local officials and other small importers.
Cook also is the owner and operator of the Western Fair farmers' market, taking over the entire operation last year after starting out at the market as a tenant retailer.
He recently moved his coffee roasting operation and offices from a commercial unit at 3392 Wonderland Rd. S. into the second floor of the Confederation Building at Western Fair where the market is located.
He said the relocation has made both his businesses more efficient.
"I found myself with one foot in the south and one in the east. Now I have come full circle," he said.
Pastorius has taken over Cook's former location on Wonderland Road and turned it into a new home for On the Move Organics. Pastorius operates year round but during the growing season he buys organic produce from local farms and delivers it to customers on a custom-made bicycle.
The new On the Move Organics outlet sells Fire Roasted Coffee and products from the Arva Flour Mill along with organic vegetables. A grand opening will be held in February
Pastorius said the new outlet gives him more storage space for his organic vegetables.
"This frees me up to do more food foraging," said Pastorius.
Cook and Pastorius plan to make more trips to Central America in the future and say they may take some of their customers along for "food tourism" tours.
