Hi Dave,
Just bought and tried some of your coffee today, it's great! My question is, what is the best way to store the coffee beans?

Hi Andrew,

Sorry for the delay in answering, the Food and Wine show this weekend was crazy needed a couple days to pick up the pieces.

Storage of Beans really depends on how much coffee you drink in a week. If you are going to consume the quantity you have purchased in a week I would leave them on the counter in an airtight container or squeeze the air out of resealable bags, like ours and close the ziplock.

The secret is buy what you can consume in a week. MMMmmm good fresh coffee.

If the attraction of saving money in bulk gets the better of you or you don't drink it frequently then I recommend the fridge if you buy a two week supply.

After that I would freeze in air tight packages in small amounts. Do not let the beans thaw and freeze repeatedly, keep them frozen. Remove what you need grind them frozen and voila off to the races and back in the freezer with the rest.

This my friend is the direct path to much fresh coffee goodness.

Love the site. Getting ready to make a purchase....finish up my last batch that I have.....and waiting to try out my new conical burr grinder.

I saw a comment about storage. I was told never to put beans in the fridge or freezer. Can you advise on that again? I tend to buy a months worth because I take my coffe to work and make some each day instead of buying at a local shop...so I go thru allot!

I am also curious about several coffees - The Paupau coffee and the Costa Rican decaf. I have tried PP before and the C.R. looks verty interesting.

Storage.
It would be the ultimate if a bean never hit a cold/frozen enviroment. If your house is cool, then I would store out of refrigeration. The thing we are trying to avoid is oxidization of the oils in and on the bean. This occurs when then beans are in a warm enviroment for an extended period of time and even quicker when also exposed to oxygen. I still feel if beans are held for longer than four weeks unopened and one week opened they benefit from being in a cooler enviroment such as a refrigerator.

Papau New Guinea
Well what can you say about the beautiful PNG. It displays beautiful and thick fruit which is slightly raisined due to the dry process that the cherry under goes, much like sun drying. Coffee from this area all tend to be low acidity which people always love. When we brew this up around the roastery we always note how much we like it. Roasts on this one are medium dark

Costa Rica Decaf
This coffee is definetly the hottest decaf I have. The quality is exceptional and the balanced cup with bright acidity is probably better than the non decaf one I carry. We roast this one dark which even to smell creates near madness.

Just thought I might add a tid-bit. I wouldn't advise in refrigerating roasted beans (ground or otherwise).

As we all know, water and moisture are an enemy of a skillfully roasted bean. Moving beans from a warm - to cool - to a warm area repeatedly or for extensive periods may cause condensation, to which would stagnate the beans and those precious volatile oils (which are water soluble) are compromised.

Advice: Invest in a resealable jar from the dollar store. And keep in a cool dark place (or out of direct sunlight). I picked up a few frosted, dark-blue resealable jars from 'dollar giant'. Something like that, you need not fear direct sunlight either. Hope this helps anyone. Cheers.
